The Perfect Supper for a Rainy Day

You know when it starts to rain just before you have to go outside? That happened to me today when I got back to the office after lunch. So I decided to wait in my car for a couple of minutes to see if it would let up a little. Only it didn't. It rained harder. It rained like I'd never seen it rain before. I thought, "at least I have my new umbrella we bought on vacation!" then I remembered that I had forgotten to bring it to lunch, it was sitting at my desk. The rain wasn't going anywhere so I decided to run for it but by the time I made it to the door, I was drenched. Cowboy boots and all. It made for a pretty miserable afternoon at the office. I just made some hot tea and tried to carry on. Luckily for me, when I got home Mr. Gillean was already in the kitchen making one of my favorite dinners and the perfect remedy for an afternoon spent wearing wet socks. He was making lentil soup. It's a detox friendly meal and it has so much flavor! Tim found the recipe on a while back and he's made it several times since and it's always so delicious. Plus we always have tons of leftovers and it's great to take to work for lunch.
